Field to Bowl Chili
Bile acids can accumulate in the body and have a tumor promoting effect making their removal important in cancer prevention. Cooked beets were the best vegetable at removing carcinogenic bile acids from the body. Turnips were also an effective bile acid remover and carrots ranked 5th best. Serendipitously all three of these vegetables can be found in this chili. Which Vegetable Binds Bile Best
Plants
- 4 cups cooked green lentils
- 1 cup water/homemade vegetable broth
- 3 medium beets, cubed
- 3-5 small turnips, cubed
- 3 small carrots, diced
- 1 zucchini, diced
- 1 summer squash, diced
- 1 onion, chopped
- 3 large tomatoes, chopped
- 1 green pepper, diced
- 1 hot pepper, minced
- 4-7 cloves garlic, minced
- handful fresh cilantro, chopped
- black pepper
- nutritional yeast (optional)
Technique
Crush and mince garlic then set aside. Add water, beets, turnips, carrots, onion, zucchini, and squash to a large soup pot and cook over medium heat for 5-10 minutes. Turn heat to low and cook another 10-15 minutes. Add remainder of ingredients except nutritional yeast and cook until all vegetables are tender, about 10 minutes. Season to taste with black pepper. Top each individual serving with tablespoon nutritional yeast.
