Snowed-in Bean Bake
Bake this casserole to add extra warmth to your home when it's scary cold out.
Plants
- 3 cups cooked* beans (kidney, red, black, navy, etc)
- 2 medium carrots, diced
- 1 large parsnip, diced
- 1 package frozen organic spinach or 1 lb fresh
- 1 medium red onion, diced
- 4 cloves garlic, minced
- 1 ½ cups strained tomatoes and/or salsa
- 1 tbsp cumin
- 1 tbsp chili powder
- 2 tsp basil
- 2 tsp oregano
- 2 tsp cilantro
- pinch cayenne pepper or chipotle chili powder
- pinch white pepper
Technique
Combine all ingredients in a casserole dish and bake at 350°F for about 1 hour.
