Plants
- 1 red onion, chopped
- 1 clove garlic, minced
- 4 cups beets, cubed
- 4 cups sweet potatoes, cubed
- ½ tsp nutmeg
- ½ tsp thyme
- 2 tbsp basil
- 1 lb organic* spinach
- Black pepper
Technique
In a large skillet, sauté onion and garlic with a splash of water until onion translucent, about 5-10 minutes. Meanwhile, boil beets in a small amount of water until mostly tender. Strain and add to skillet. Boil sweet potatoes in the same water until tender. Strain and add to skillet. Add seasonings to skillet and enough of the beet water to create a rich sauce. Fold in the spinach and continue to cook until spinach wilts. Serve spooned over whole grains (red rice, millet, barley etc.)
