Curry Up and Squash Bad Eating

Plants
- 1 cup uncooked brown rice
- 2 cups water/homemade vegetable broth
- 3 cloves garlic, crushed and minced
- 1 large onion, chopped
- 1 cup green beans, chopped
- 2 carrots, diced
- 2-3 organic* apples, diced
- 1 large tomato, chopped
- 1 jalapeño pepper, minced
- 1 head broccoli, chopped
- ½ cup water/homemade vegetable broth
- 1 tbsp curry powder
- ½ tsp Ceylon cinnamon
- ¼ tsp white pepper
- 1 acorn squash, halved
Technique
Crush and mince garlic and set aside. Cook the rice in water/vegetable broth. Halve and deseed squash. Cook skin up at 375°F until soft, about 30 minutes. Meanwhile, place garlic, onion, beans, carrots, apples, tomato, pepper, water/vegetable broth, and spices in a large skillet. Cook on medium to low heat until vegetables tender. Add broccoli and cook until bright green. Add cooked rice to large skillet and stir to combine. Use the squash to make boats and serve with the curry spooned on top of the squash.
